Easy Keto Dessert Recipe/Lemon Merengue Pie!! Keto in the Country- 1 carb dessert

When you taste this easy keto/ low carb dessert, you will completely feel like you have cheated on your keto diet! It’s going to happen, we are in keto fat burning mode and all of a sudden we want something sweet! This easy Lemon Merengue Pie fits the bill. It’s fresh, and it tastes like Spring has arrived. And if you have friends or family not not he keto diet, they will not know the difference. It’s perfect to take to a get together so you can avoid those other sugar laden desserts.

We used a crust on this recipe, but did not add it to the list of ingredients because it is completely optional. 

2T water
1T beef gelatin
2T almond flour
1/4 t salt
1/2c Swerve or sweetener of choice
1 1/2 water
2 lemons, juiced
2t lemon zest
2T butter
4 eggs, separated
1T Xanthan gum
3T sweetener (for merengue)

In small saucepan, add 1T water and 1T beef gelatin to make a paste, add the other 1T of water to it and bring to a boil, then set aside. 

In another sauce pan add 2T almond flour, 1/4 t salt, 1/2 c sweetener and whisk together.  Add 1 1/2c of water, the juice from the 2 lemons, and the 2t of lemon zest and whist again.  Add the gelatin from the small saucepan and whisk to a boil.  Add the 2T of butter, the 4 egg yolks, and the lemon mixture, bring to a boil and set aside.

Beat the 4 egg whites on low for 1 minute, then add the 3T of sweetener and turn up to medium for 1 minute.  Turn on high and beat until high peaks form.  
Pour lemon mixture, should be a nice lemon curd, in a 9×9 pan over a crust if you wish to use one, and fold merengue on top of the lemon mixture.
Bake at 400*f until slightly brown on top.
