Keto Fat Bombs (No Baking) – Cinnamon, French Toast and Peanut Butter: WE Create!

This video is a recipe for Cinnamon, French Toast and Peanut Butter Fat Bombs.

Not only do the fat bombs have a sweet flavor they are very high in fat. They can easily supplement a meal or as a small snack in between meals to keep you going through the day. We find it difficult to get the amount of fat needed in a healthy keto diet so sometimes this is just an easy substitute for us.

Cinnamon Roll Fat Bombs

8 oz cream cheese, softened
½ cup (4 oz) unsalted butter, softened
½ cup (128g) SunButter
½ cup (96g) golden monk fruit sweetener
2 tsp cinnamon
1 tsp pure vanilla extract

Frosting (A step we omitted)
1 ½ oz cream cheese, softened
1 tbsp (15 mL) heavy cream
2 tsp (8g) golden monk fruit sweetener
¼ tsp pure vanilla extract
1/16 tsp cinnamon

Instructions

Fat Bombs: In a mixing bowl, using an electric mixer, mix all ingredients until well-combined. Cover mixing bowl with lid or plastic wrap and transfer to refrigerator to chill for 30 minutes.
Remove mixing bowl from refrigerator and form mixture into balls or scoop and flatten into silicone mold cavities. Transfer fat bombs to freezer to harden for 45 minutes.

Frosting: Meanwhile, in a mixing bowl, using an electric mixer, mix together cream cheese, heavy cream, monk fruit sweetener, and vanilla extract until fully incorporated.

Final Steps: Remove fat bombs from freezer. Add drizzle of frosting and sprinkle of cinnamon on top

Store fat bombs in airtight container in freezer.

Ingredients

8 oz cream cheese, softened
1 stick unsalted butter, softened
1/2 cup almond butter or, for nut-free, No-Sugar-Added SunButter Sunflower Butter
1/3 cup golden monk fruit sweetener (use code “REALBALANCED” for 20% off Lakanto products)
1/3 cup Maple-Flavored Syrup
1 tsp maple extract
1/2 tsp pure vanilla extract

Optional Materials
Silicone mold

Instructions

In a mixing bowl, using an electric mixer, mix all ingredients until well-combined. Freeze mixture for 30 minutes.
Remove mixing bowl from freezer and form mixture into balls or scoop and flatten into silicone mold. (If forming fat bombs into balls, line plate with parchment paper and set fat bombs atop parchment paper.)
Harden fat bombs in freezer for 45 minutes. Enjoy!

Peanut Butter Fat Bombs

INGREDIENTS

1/2 cup coconut oil solid
2/3 cup raw peanut butter no sugar added
1 teaspoon ground cinnamon
1/4 teaspoon sea salt
2 teaspoons vanilla extract
1 tablespoon maple syrup
course sea salt to top
dark chocolate melted (optional)

INSTRUCTIONS
Line 12 mini muffin tins with paper liners and set aside.
In a large, microwave-safe bowl, combine the coconut oil and raw peanut butter. Place in the microwave and heat on high for 30 seconds. Remove, stir and place back in the microwave and repeat until completely melted.
Add the cinnamon, sea salt, vanilla and maple syrup and whisk until combined. Evenly distribute the into the prepared muffin tins. Sprinkle with sea salt. Place in the freezer for at least 1 hour. Remove from freezer and drizzle with dark chocolate if desired.
Store in the freezer for up to 3 months.
