KETO Friendly Italian chopped salad!!!
A weekly favorite of mine since starting keto. Full of healthy fats & topped with a delicious sweet & tangy dressing. Ingredients are Romaine, baby spinach, cucumber, red onion, pepperoncini, kalamata olives, feta cheese, & a bit of tomato. Meats were pepperoni & Genoa salami from my local deli & some chopped Black Forest ham. Chop nicely & mix well. Top with a mixed dressing that includes 1/4 cup of red wine vinegar, 1/4 cup of EVOO, dried parsley, garlic, red pepper flakes, salt & cracked black pepper and a bit of truvia to your desired sweetness. I blended mine with a frother. I like the texture it gets doing it this way. It comes out smooth. I’ll store in a mason jar if I make a lot. Enjoy!
